CHOLESTROL FREE VEGETABLE KOOTTU

Whenever i have vegetables leftover  , i make this koottu. you can add any vegetables you have(no brinjal,ladys finger).this koottu does not need coconut,oil . simple but yummy dish.
you can have with chappathi also.



 Ingredients:
Beans
10-12
Carrot
3
Indian beans

Potato

Peas
1 cup
Cabbage
½ cup
Moong Dal
4 tbls
Sambhar powder
2 TSP
Salt
As per taste
Mustard seeds
1 tsp
Fenugreek seeds
½ tsp
Onion
½ medium
Tomato
½
Curry leaves

Coriander leaves
For garnishing
Oil
2 tsp
Hing
1 tsp




METHOD:

  • Cut the veggies in to pieces .  now in a vessel add all veggies(no onion and tomato).
  • Add moong dal to it  with salt and sambhar powder and pinch of turmeric powder.
  • Pressure cook it  till the veggies are done.(mostly 3 -4 whistle).
  • Switch off the stove and keep it till pressure comes down.
  • Now in a kadai  add a tsp  of oil, add mustard seeds when splutters add fenugreek seeds .
  • Add curry leaves and chopped onions and sauté till it becomes transperant.
  • And add tomato to it and sauté for 2-3 mins.
  • Now add the boiled veggis and bring to boil  ,if it is so thick add little water.
  • Sprinkle hing to the koottu and boil it for 10 mins in medium flame.
  • Garnish with coriander leaves.
