For Grinding:
Dry Coriander

Method:
- Add some oil in the hot pan and add all the ingredients for grinding one by one. Add coconut at the last and stir fry it. (Except Tamarind cumin seeds, and pepper) Once it’s done grind everything to a fine paste. Add desired salt for this stuffing alone.
- Cut the brinjal and add the grinded stuff inside the brinjal and keep it aside.
- Now add oil in the pan. Once it's hot add the mustard seeds and allow it to crack.
- Add the onion fry it. Then add the tomato and fry it.
- Now add the stuffed brinjal and fry till it's half cooked..
- Add the remaining stuff.
- Keep everything in the cooker and leave it for 10 min and turn off.
- Garnish with coriander leaves.
