Peanut Chutney


Ingredients:
Roasted Peanut
½ Cup
Onion
¼ (medium)
Red Chilli
5-7
Urad dhal
1 Tsp
Tamarind
Walnut size
Salt
As Needed
Oil
1 Tsp
Mustard seed
¼ Tsp
Curry leaf
3-5
Asafetida
Pinch

Method:
  • Heat a pan. Add oil, Urad dhal and red chilli. Fry it for few seconds till its golden brown. Remove it and cool it.
  • Heat another pan. Add oil and chopped onion. Saute it for few mins and remove from the flame.  Allow it to cool.
  • Now add the roasted peanuts, fried onion, Urad dhal, red chilli and tamarind. Grind it to a fine paste.
  • Heat a pan and add oil. Once it’s hot add mustard seeds and allow it to splutter. Then add asafetida and curry leaf. Then transfer them to the chutney and mix it.
  • Serve it with hot idlies or dosa.



Serves- 4

Note:
Onions are optional. You can avoid it.
You can add grated coconut to it at the time of frying the red chilli and urad dhal. Just fry it for few seconds.

Tomato & Onion Chutney


Ingredients:
Tomato
3 (Medium)
Onion
¾ (Medium)
Whole Red chilli
5
Channa Dhal
2 Tsp
Urad Split Dhal
1 Tsp
Hint
1 Tsp
Salt
As Needed
Coriander Leaves
Few
Oil
1 Tbs




Method:

  • In a pan add about 1 tsp of oil. Once it’s hot add the channa dhal, Split Urad dhal, Whole red chilli and hint. Stir it for 2 mins in a medium low flame.  Fry it till its golden brown and grind it to a fine powder. (Dhal powder)
  • Rough chop the onion and tomato.
  • In a frying pan add oil and onion. Fry the onion until its golden brown.
  • Then add the tomato and fry it for 5 -7 mins.      
  • Then grind the fried mixture along with the salt coriander leaves and the ground dhal powder.
  • Serves them with Idly or Dosa.

Coconut Chutney

Ingredients:
Coconut
½ cup
Roasted Chana dhal
1 Tbs
Green Chilli
4
Tamarind paste
One drop
Mustard
¼ Tsp
Curry Leaf
4
Split Dhal
1 Tsp
Coriander Leaf
Few
Oil & Salt
As Needed





Method:
  • Grind the coconut, Chilli, roasted chana dhal, tamarind paste, coriander leaf and salt. 
  • Add water while grinding depending on the cosistency.
  • In a hot pan add oil, then mustard seed. Allow it to splutter.
  • Add Split dhal and curry leaf. Stir it.
  • Pour in on the Chutney and mix it.
  • Serve it with Idly or dosa.

SPICY GARLIC CHUTNEY

Ingredients:

Garlic
½ cup
Mustard
1 Tsp
Whole Red Chilli
8
Urad Dhal
½ Tsp
Curry Leaves
5
Tomato
1(Medium)
Oil
2 Tsp
Salt
As Needed


Method



  • In a kadai pour 1tsp of oil add mustard seeds  followed with urad dal , red chillis ,curry  leaves
  • Fry for 2 mins  keep aside. again add oil in a pan fry garlic till golden color and keep seperaely.
  • In a pan add some little more oil fry tomato(don't chop,fry whole )till the skin peels out and cooked fully.
  • Now in a mixer first grind redchillis fllowed by garlic and last tomato then add salt as per taste.
  • You can serve as it or add tadka to it and serve.



best with dosa and idly.

Kara Chutney

Ingredients:

Onion
3/4
Tomato
1
Whole Red chilli
5
Asefotida
1 Tsp
Mustard
1 Tsp
Curry Leaf
5
Split Dhal
1 Tsp



Method:
  • Grind the onion, tomato, red chilli. Make it a fine paste.
  • In a hot pan add oil then mustard. Allow it to splutter.
  • Add the split dhal, asefotida and curry leaf. 
  • Once its done add the onion tomato paste. 
  • Add the salt and cover it with the lid.
  • Once its done serve with idly or dosa.(make sure the paste has no raw smell)
