Veggie Pasta


Ingredients:

Pasta - 2 cups
Onion - 1/2
Green peppers - 1/2
Tomato -2
Garlic cloves - 1(finely chopped)
Parsley - to garnish
Olive oil - 1 tbs
Salt & Pepper - to your taste


For seasoning:


Oregano - 1/2 tsp


Italian seasoning - 1/2 tsp




Method:


For the puree:

  • Boil the water and add tomato to it and leave it for 10 mins.
  • Take it out and put that in the cool water so that the skin peels of automatically.
  • Blend the tomato's and keep it aside.
  • In a pan add water and allow it to boil along with salt.
  • Then add pasta to the boilig water and allow it to cook.
  • Once its cooked rinse them in the cool water and add the seasonings.
  • Meanwhile in another pan add the olive oil and add the onionand garlic cloves.
  • Season them with salt and pepper. Fry it for 3 mins.
  • Add the green peppers, tomato puree and allow it to cook for few mins
  • At this stage add the pasta and fold it
  • Then garnish them with fresh parsley.





Optional


You can also add parmesan cheese after adding the pasta.
