This is my favourite dish. My grandma use to make and we call it as Malabar avial , the taste enhances by adding lots of vegetables.best with rice and some vadams.

Method:
- Cut all the veggies in lengthwise in same propotion.
- Boil the veggies in tamrind pulp by adding salt and turmeric powder. See to that the veggies should not become smashy.
- Now take coconut ,redchillis and grind it into paste by adding water, and atlast add some rice flour.
- Now add the coconut paste to the veggies and bring it to boil ,keep it in low flame.
- Add a bunch of curry leaves and coconut oil and let it boil for 10 mins in low flame.
- Switch off the stove and serve it with hot rice.
- Note:
- All the veggis should be cut samewise, this makes to cook evenly.
- add the tamrind pulp correct to the veggies , so much water can make avial watery.
- Coconut oil enhances the taste , so add little liberally.
- You can add raw mango pieces ,snake gourd,eggplant .but adding mango may change the taste slightly.these are optional.
- Red chillis should be minimum 6 you can increase as per the taste.
