Whenever i have vegetables leftover , i make this koottu. you can add any vegetables you have(no brinjal,ladys finger).this koottu does not need coconut,oil . simple but yummy dish.
you can have with chappathi also.
METHOD:

Ingredients:
Beans

Moong Dal

Sambhar powder

METHOD:
- Cut the veggies in to pieces . now in a vessel add all veggies(no onion and tomato).
- Add moong dal to it with salt and sambhar powder and pinch of turmeric powder.
- Pressure cook it till the veggies are done.(mostly 3 -4 whistle).
- Switch off the stove and keep it till pressure comes down.
- Now in a kadai add a tsp of oil, add mustard seeds when splutters add fenugreek seeds .
- Add curry leaves and chopped onions and sauté till it becomes transperant.
- And add tomato to it and sauté for 2-3 mins.
- Now add the boiled veggis and bring to boil ,if it is so thick add little water.
- Sprinkle hing to the koottu and boil it for 10 mins in medium flame.
- Garnish with coriander leaves.
